Serve with low-fat or fat-free milk for a great afternoon snack! Small children can choke on raisins and dried fruits! To be safe, do not serve this recipe to children less than 2 years of age. Let your preschooler help with measuring and mixing the oatmeal, cereal, and dried fruit.
Ingredients:
2 cups dry oatmeal
2 cups crisp rice cereal
½ cup raisins or dried cranberries
½ cup brown sugar, firmly packed
½ cup light corn syrup
½ cup creamy peanut butter
1 teaspoon vanilla
Non-stick cooking spray
Directions:
Coat bottom and sides of a 9 x 13 inch pan with non-stick cooking spray. In a large bowl, combine the oatmeal, cereal, and dried fruit. Set aside. In a small saucepan, mix together the brown sugar and corn syrup. Heat this mixture, and stir until boiling. Remove from heat and stir in the peanut butter and vanilla. Pour heated mixture over the cereal mixture and stir well. Press the combined mixture into the prepared pan. Cool and cut into 16 bars. Store in an airtight container.
