Cheesy Tomato Grilled Sandwich

April 12th is Grilled Cheese Sandwich Day.  This is a different and healthy way to enjoy grilled cheese. Experiment with different cheeses for different flavors. 

Ingredients:

1 tablespoon butter

4 slices whole wheat bread

2 slices cheddar cheese

1 large tomato, sliced

1 sweet onion, thinly sliced

½ avocado, sliced

2 slices provolone cheese

Directions:

Preheat skillet over medium heat. Butter one side of each slice of bread.  Place bread butter side down in skillet; add cheddar, tomato, onion, avocado and provolone.  Place bread on top with butter side up and cook 2 minutes, or lightly browned. Flip and continue cooking until cheese is melted. Serves 2.
