Carrot Bread

The whole family will love this bread. It’s moist, sweet, and even has vegetables in it!

1 ½ cups flour, sifted

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon cinnamon

½ teaspoon salt

¼ cup vegetable oil

½ cup applesauce, unsweetened

2 eggs

1 cup sugar

1 cup grated carrots (about 3 medium)

½ cups pecans or walnuts, chopped (optional)


  1. Preheat oven to 350 degrees.
  2. Combine flour, baking soda, baking powder, cinnamon, and salt in a large bowl.
  3. Combine oil, applesauce, eggs, and sugar in a medium bowl.
  4. Add wet ingredients to the flour mixture and mix just until combined.
  5. Gently stir in carrots and pecans.
  6. Pour into a greased 9x5x3-inch loaf pan and bake for 50-60 minutes.
  7. Remove from oven and let cool for 5 minutes before removing from the pan.
