Breakfast Tortilla Cups

These are great for breakfast.  They could also be used for a fun  dinner idea!

Ingredients:

Whole wheat tortillas (1-2 per person)

Eggs, (1 per tortilla)

Cheese, grated

Variety of vegetables such as:

red or green bell pepper, spinach, corn, green onion, mushrooms, tomato, or onion

Variety of cooked meats such as: bacon, breakfast sausage, or ham

Directions:

Preheat oven to 350°F. Chop your veggies and meats in small pieces.  In an ungreased muffin tin, press tortilla into each cup to form its shape.  In a bowl, scramble the egg and combine your choice of vegetables and/or meats. Beat gently and divide evenly into the cups.  Fill cups to the rim of the muffin tin, sprinkle with cheese and bake for 15-20 minutes until egg is fully cooked and tortillas are golden.
