Black Bean Salad

This recipe serves 12, adjust as needed for smaller families or freeze extra for later use. With a variety of colors, this salad is full of vitamins and healthy antioxidants. Prepare in advance to allow the flavors to blend and intensify.

Ingredients:

1 (15oz) can black beans, rinsed & drained

1 small bag of frozen whole kernel corn, thawed              (~10oz)

8 green onions, chopped

2 jalapeno peppers, seeded and minced

1 green bell pepper, chopped

3/4 cup jicama, chopped

1 avocado, peeled, pitted, and diced

1 (4oz) jar pimentos

3 tomatoes, seeded & chopped

1 cup chopped fresh cilantro

1 lime, juiced

1/2 cup Italian salad dressing

1/2 teaspoon garlic salt

 

Directions:

In a large bowl, combine all ingredients and season with garlic salt.  Toss, and chill until serving. Serves 12
