To add even more flavor, top with cilantro, green onions, and black olives. Substitute grilled chicken or beef for the beans or add both to make it more filling. For variety, use red, yellow, or orange bell peppers in addition to the green ones.
Ingredients:
4 bell peppers
1 cup of salsa
2 teaspoons taco seasoning
2 cups black beans or refried beans
1 cup shredded cheese
Directions:
Preheat oven to 350 degrees F. Remove seeds and cut peppers into bite-sized pieces. Arrange pieces closely together on a foil lined baking sheet. In a bowl, combine salsa, seasoning, and beans. Spoon mixture over the pepper pieces and top with cheese. Bake for 15 minutes or until peppers are heated and cheese is melted. Serve and enjoy!
These are delicious! I made them last night and they were a big hit – especially with my friend who is allergic to corn. He hasn’t had nachos in years and said he will be making nachos this way again soon!
