Banana Pancakes

Keep pancakes warm in an oven preheated to 250 degrees.  Place them in a loosely covered ovenproof dish while cooking remaining pancakes. This recipe makes 8 to 10 pancakes. Make heart shaped pancakes for Valentines Day!

Ingredients:

2 ripe medium bananas

1 cup white whole wheat flour

1/4 cup quick cooking oats

1 tablespoon brown sugar, packed

2 teaspoons baking powder

1 cup low-fat milk

2 eggs, lightly beaten

1 tablespoon canola oil

1 banana, thinly sliced

1/2 cup maple syrup

Directions:

In a medium bowl, mash bananas with a fork until smooth.  In a large bowl, mix flour, oats, sugar,  & baking powder. In a medium bowl, combine milk, eggs, oil, and mashed bananas. Stir banana mixture into flour. Batter will be lumpy. Heat a lightly greased griddle to medium heat.  Pour 1/4 cup batter onto griddle for each pancake.  Cook 1 to 2 minutes per side, or until lightly browned.  While pancakes stay warm, heat sliced banana and maple syrup 1 to 2 minutes, until banana begins to soften. Serve maple-banana mixture over pancakes.
