Baked Parmesan Zucchini

Be sure to pat the zucchini dry, otherwise, the coating will not stick!  This is a great way to use in-season zucchini. Look at the local Farmer’s Market for a wide variety of squash.  The recipe can easily be cut in half for feeding a smaller amount of people.

Ingredients:

4 medium zucchini

2eggs

½ cup of water

¼ cup finely grated parmesan cheese

1 ½ cups bread crumbs

1 tablespoon dry Italian herbs

 

Directions:

Line cookie sheet with foil and spray with cooking spray.  Set oven to broil setting.  Cut zucchini into long sticks, approximately 3 inches long.  Microwave for about 3 minutes and pat dry with a paper towel.  Mix eggs and water together in a small bowl. Mix cheese, bread crumbs, and herbs together in another bowl.  Dip zucchini in the egg mix and then into bread crumb mix.  Arrange zucchini on cookie sheet and broil for 12-15 minutes, turning once halfway through. Serve with a marinara sauce for dipping. Serves 8.
